Granola cakes
Breakfast is the most important meal of the day; here is one of my favourite winter recipes that is great for when you are on the move!
Ingredients
- 190g rolled Oats
- 30g almonds meal
- 45g macadamia nuts roasted and roughly chopped
- 80g dried apricots pre soaked and roughly chopped
- 55g sultanas
- 45g sunflower seeds
- 20g poppy seeds
- 20g sesame
- 30g shredded coconut
- 2 pinch flaked salt
- 1tsp ground clove
- 1tsp ground cinnamon
- 1/2tsp ground ginger
- 95g honey
- 105g butter
- 105g brown sugar
- Flaked almonds for garnish
Method
Pre heat oven to 160’C
Prepare muffin tin by lightly spraying with oil and scatter over flaked almonds and set aside until ready to use.
In a medium size bowl, place all the dry ingredients excluding the sugar, and mix with a spoon to combine.
In a small pot combine the sugar butter and honey, place on a low heat until dissolved.
Once dissolved increase the heat and simmer till the colour changes to a light caramel brown, approximately 5 minutes.
Pour the hot caramel over the mixed dry ingredients and mix until well coated. Press mix into muffin tin pushing down with a spoon to compact the mix.
Bake in oven for 15 minutes or until golden brown on top.
Remove from oven and allow to cool completely before turning out, as they will fall apart if moved before setting.
