Ingredients

  • 125g butter
  • 3/4 cup caster sugar; raw
  • 2 Eggs
  • 3 small Bananas (mashed)
  • 200 grams passionfruit yoghurt
  • 1 1/2 cups self raising flour (sifted)

A yummy healthy muffin for you and your little ones.

Method

Preheat oven to 180C. Grease a 12 muffin tray - I use a silicon one as it's easier to get the muffins out.

Cream the butter and sugar with electric beaters.

Add eggs one at a time and beat well between each addition.

Mix in bananas and yoghurt lightly.

Fold in flour until just combined.

Spoon mixture into muffin tray. Cook for approx 25-30min. Place on rack to cool for a few minutes then remove from the tin and allow to cool before eating (or icing).
