Ingredients

  • 125g Canned corn
  • 1 Cup Self raising flour
  • 2 tablespoons Sugar
  • 3/4 cup Milk
  • 1 Egg

This recipe is a family favourite. I have also tried finely sliced pear in this recipe instead of corn, which goes down well. A great go-to food for my baby and toddler.

Method

Sift flour and sugar into a bowl.

Combine egg and milk together.

Add corn to milk and egg, and mix.

Mix all ingredients together to make a thick smooth batter.

Drop dessert-spoons of mixture into heated pan.

Cook until bubbles begin to appear on surface of the pikelet. Turn and brown the other side.
