Mini veggie and cheese muffins

- 1/2 cup grated or finely chopped veggies (eg. carrot, zucchini, mushrooms, onions, etc)
- 1/2 cup grated cheese
- 1 cup self raising flour
- 2 tbs butter
- 1 egg
- 1/2 cup milk
- 1 tsp powdered chicken stock (optional)
- 1 tsp dried parsley (optional)
Perfect for kindy lunch boxes and smuggling those veggies into your child's diet.
Pre-heat oven to 180 degrees C.
Grease a mini muffin tray.
Using a spoon, mix all the ingredients. The mixture should be similar to cake batter. If it's too dry, add a little more milk, if it's too runny, add more flour.
Bake for 30 minutes or until toothpick comes out clean.
Suitable for freezing. Just reheat in the microwave or oven.
