Ingredients
- 2 cups self raising flour
- ½ cup caster sugar
- ½ cup desiccated coconut
- 225mls milk
- 90 grams butter, melted
- 1 tsp vanilla extract
- 1 tbsp lime juice
- 2 eggs
- 1 tbsp lime rind
- ¼ cup shredded coconut
- 3 kiwi fruit
Method
Preheat oven to 180°C. Peel and slice kiwi fruit and set aside. To a medium sized mixing bowl add flour, sugar and desiccated coconut. Mix with a wooden spoon and make a well in the middle.
In a separate bowl whisk the melted butter, eggs, milk, lime juice and vanilla until well combined. Pour the liquid ingredients into the well of the dry ingredients and mix with a wooden spoon. Muffins are best when made quickly and not over mixed.
Add lime rind and mix lightly through. Spoon muffin mix into 15 large patty pans in the muffin tray, then top with 3 slices of kiwi fruit. So the kiwi fruit stays in place, ensure you fill the patty pans no more than two thirds full.

Bake for 18 - 20 minutes or until a skewer comes out clean. Once cooked, remove from the oven and allow them to cool completely on a wire rack before placing in an airtight container.
