1. Place the lemon juice, lemon zest and caster sugar in a small saucepan and stir over low heat for 5 minutes, or until the sugar is dissolved. Remove from the heat and leave to cool.
2. Add 2 cups (500 ml) water to the juice mixture and mix together well. Pour the mixture into a shallow 30 × 20 cm metal container and place in the freezer until the mixture is beginning to freeze around the edges. Scrape the frozen sections back into the mixture with a fork. Repeat every 30 minutes until the mixture has even-size ice crystals. Beat the mixture with a fork just before serving. To serve, spoon the lemon granita into six chilled glasses.
