Lemon grass tea
Method
1. Prepare the lemon grass by removing the first two tough outer layers. For maximum flavour, only use the bottom one-third of the stalk (the white part). Slice thinly into rings. (You could use the remaining stalks as a garnish, if you like.)
2. Place the lemon grass in a jug and cover with 2½ cups (625 ml) boiling water. Add the lemon slices and cover. Allow to infuse and cool. When cooled to room temperature, strain. Add the honey, to taste. Place the tea in the refrigerator to chill.
3. To serve, pour the tea into two glasses with extra slices of lemon. Add ice, if desired.
