Bruschetta Crumpets

Don't limit crumpets to sweet toppings. Golden crumpets are like sponges. When paired with this simple bruschetta topping, they soak up all the delicious juices to make a fantastic lunch.


  • 2 Golden Crumpets
  • 1 tomato
  • 1/2 spring onion
  • 2 basil leaves
  • 1 tsp olive oil
  • pinch salt and pepper


Pack two toasted Golden Crumpets into a lunch box with a spoon.

Chop the tomato into quarters then using a sharp knife, remove the seeds. Slice the flesh into small cubes.

Mix the chopped tomato with some chopped spring onion, finely shredded basil leaves, olive oil and seasonings. Place the bruschetta mixture into a separate small lunch container.

To assemble at lunch simply top each crumpet with half of the bruschetta mixture.

These bruschetta crumpets are a great idea for tomato lovers and the best part is that the crumpets soak up all the juicy goodness. Perfect for older kids looking for some variety in their lunchbox.
