This is the perfect recipe for when you have crumpets left over that are beginning to lose their softness. Use croutons in salads or on top of soups. These are no ordinary croutons, they taste incredible!
- 2 Golden crumpets, cut into 1.5cm squares
- 2 tablespoons olive oil or butter (your preference)
- pinch sea salt (optional flavourings: garlic, dried herbs, fresh rosemary or thyme sprigs)
Place a non-stick frying pan over medium heat. Add the olive oil or butter and when up to temperature, add the cubes of crumpet.
Season with salt and any extra optional flavourings) and toss in the pan until golden and crunchy all over (about 5 minutes).
Leave to cool and use on top of salads or soups.
