French Toast Golden Crumpets

The spongy holes in a Golden Crumpet soak up protein rich eggs better than anything and make the perfect lunch box snack to sustain energy throughout the school day.
- 1 Golden Crumpet
- 1 egg
- 2 tsp butter
- pinch cinnamon
Crack an egg into a bowl and whisk lightly to emulsify. Soak the crumpet, holes side down in the egg.
Meanwhile heat a non-stick pan over medium heat and add the butter to slowly melt. Flip the crumpet in the egg to briefly soak up the egg on the other side.
When the butter is bubbling place the crumpet into the pan and cook gently for 2 minutes on each side.
When cooked through, remove and set aside. Sprinkle lightly with cinnamon. Serve with berries or fruit in the lunch box. It's perfect to eat warm or at room temperature.
