Vegetarian pizza rounds
Healthy, roasted vegetables on english muffins are a great way to get some extra vitamins into the kids.
These versatile lunchbox winners are the perfect substitute for a sandwich. Why not get creative with different toppings and create something different your kids will love.
- 1 English Muffin
- 1 tbsp tomato paste
- 1/2 cup mozzarella cheese
- 1 tbsp chopped capsicum
- 1 tbsp pineapple pieces
- 1 tbsp sliced mushrooms
- 1 tbsp chopped tomato
- 1 tbsp sliced spring onion
- 1 tbsp BBQ sauce
Line a tray with baking paper and cut the muffin in half.
Lightly toast the outside of the muffin under the grill, remove and allow to cool.
Spread the tomato paste on each side of the English muffin and top with half of the mozzarella cheese.
Evenly spread toppings on each side of the muffin.
Sprinkle the remaining cheese on top and place on tray under the grill for approximately 10 mins until cheese is melted.
Allow to cool and refrigerate overnight.
