1. Prepare the mangoes by slicing off the cheeks with a sharp knife. Using a large spoon, scoop the flesh from the skin. Cut the flesh into chunks and put in a blender with the yoghurt, lemon juice and 3 tablespoons of sugar.
2. Add 185 ml (6 fl oz/¾ cup) of cold water and blend for 40–60 seconds, or until smooth. Taste for sweetness and add extra sugar, if desired.
3. Put some ice cubes, if using, in the bottom of four glasses. Pour the lassi over the top and serve immediately, topped with diced mango.
