Marinated Chilli Mushrooms

Ingredients

Marinated Chilli Mushrooms

750 g (1 lb 10 oz) button mushrooms
500 ml (17 fl oz/2 cups) olive oil
2 tablespoons lemon juice
1 garlic clove, finely chopped
¼ teaspoon caster (superfine) sugar
1 red chilli, finely chopped
1 green chilli, finely chopped
1 tablespoon chopped coriander (cilantro)
1 tablespoon chopped flat-leaf (Italian) parsley

Method

 

  1. Wipe the mushrooms clean with a damp paper towel and put in a bowl.
  2. Mix together the oil, lemon juice, garlic, sugar and chilli. Pour over the mushrooms and mix well. Cover with plastic wrap and marinate in the refrigerator overnight.
  3. Just before serving, add the herbs, season and mix well.

 

NOTE: The coriander and parsley are added just before serving so that they keep their colour. However, if you prefer a stronger flavour, add them before marinating.

HINT: Serve as part of an antipasto platter, with a selection of sun-dried vegetables, marinated artichokes, caperberries and toasted bruschetta.
