Melting Moments with Jam and Cream
125 g unsalted butter
½ cup caster sugar
2 egg yolks
1 teaspoon vanilla essence
¼ cup custard powder
¾ cup plain flour
¾ cup self-raising flour
½ cup strawberry jam
¾ cup thickened cream, whipped 


  1. Preheat oven to 180°C. Line two biscuit trays with baking paper. Using electric beaters, beat butter and sugar until light and creamy. Add egg yolks one at a time, beating thoroughly after each addition. Add vanilla essence; beat until combined.
  2. Transfer mixture to a large bowl. Using a flat-bladed knife, incorporate custard powder and sifted flours. Stir until ingredients are just combined. Gather mixture together with finger tips to form a soft dough.
  3. Roll 1 level teaspoon of mixture at a time into balls. Arrange about 5 cm apart on prepared trays. Flatten slightly with fork. Bake 12 minutes or until golden. Stand biscuits on trays 5 minutes before transferring to a wire rack to cool. Spread half the biscuits with ¼ teaspoon jam each. Spoon or pipe cream over jam and sandwich together with remaining biscuits.

Storage time: Store unfilled biscuits in an airtight container for 2 days.
