Milo muffins

There aren’t many children who would refuse a milo muffin for morning or afternoon tea – or even in their lunchbox.  This is an extremely simple recipe using readily available pantry ingredients – great for a last minute treat or lunchbox stash.

Ingredients

  • 1 & a 1/2 cups self raising flour
  • 2/3 cup milo
  • 1 egg
  • 2/3 cup milk
  • 2/3 cup brown sugar
  • 1/2 tsp baking powder
  • 60g butter, softened

Method

  1. Preheat oven to 190 degrees c.
  2. In a mixer or a bowl add all ingredients, beat until smooth.
  3. Pour into muffin or cupcake papers until 3/4 full.
  4. Bake for 25-30 minutes.
  5. You may choose to make these as a quick lunchbox treat or a dessert - great warm with ice cream and chocolate sauce... !

 

Makes 6 large or 12 small muffins.
