No-bake Chocolate Slice

Ingredients

100 g shortbread biscuits, roughly crushed
120 g pistachios, shelled
150 g hazelnuts, toasted and skinned
100 g glacé cherries, roughly chopped
300 g good-quality dark (not bitter) chocolate
200 g unsalted butter
1 teaspoon instant coffee powder
2 eggs, lightly beaten

Method

  1. Lightly grease an 18 × 27 cm baking tin and line with baking paper, hanging over the two long sides. Combine the biscuits, pistachios, 90 g hazelnuts, and half the cherries.
  2. Chop the chocolate and butter into small even-sized pieces and place in a heatproof bowl. Bring a saucepan of water to the boil and remove from the heat. Sit the bowl over the pan—ensure the bowl doesn’t touch the water. Allow to stand, stirring occasionally, until the chocolate and butter have melted. Remove the bowl from the pan and when the mixture has cooled slightly, mix in the coffee and eggs. Pour over the nut mixture and mix well.
  3. Pour the slice mixture into the tin and pat down well. Roughly chop the remaining hazelnuts and sprinkle over the top with the remaining cherries. Refrigerate overnight.
  4. Remove from the tin and trim the edges of the slice before cutting into pieces. Keep in the refrigerator.

Note: Toast the hazelnuts in a moderate 180°C (350°F/Gas 4) oven for 5–10 minutes, or until light golden. Tip onto a clean tea towel and rub gently to remove the skins.
