Ingredients
Meatballs ingredients:
- 1 onion
- 3 garlic cloves
- 3 tbsp fresh parsley
- 400 grams lamb rump steak (or lamb mince)
- 400 grams pork loin steak (or lamb mince)
- Salt and pepper to taste
Tomato sauce ingredients:
- 700mls passata
- 2 cloves garlic
- 1 tsp finely chopped oregano
- Salt and pepper to taste
Method
Tomato sauce method:
Pour the passata into a mixing bowl. Crush garlic into the bowl and add the oregano. Salt and pepper to taste. Mix well, then set aside.
Meatballs method:
Preheat oven to 200°C. The meatballs can be quickly made in a food processor if you have one. Peel onion and garlic and de-stem the parsley and add them to your food processor. Pulse until finely chopped.
Place the chopped ingredients into a large bowl. Add the meat to the food processor and pulse until minced well. Add the meat to the bowl with the herbs, season with salt and pepper and mix well with your hands.
If you don’t have a food processor, finely chop onion, crush garlic, finely chop the parsley and add it to a large bowl. Add the lamb and pork mince, season with salt and pepper and mix well with your hands.
Once you have prepared the meatball mixture, use a ¼ of a cup of the mixture and shape into a ball. Add the meatballs to a ceramic baking dish as you make them. Once you have made all the meatballs, pour the tomato sauce over the meatballs so they are all covered with the tomato sauce.
Cover with aluminium foil and bake for 15 minutes. Remove the foil and bake for a further 15 minutes or until the meatballs are cooked through.
Serve on a bed of rice.
