Whenever I'm having a party with a lot of kids, I always try to include some gluten free options for my guests. Since I've never met a kid who doesn't love pizza, these little mushroom bites fit the bill perfectly. Just make sure you check that the bacon you use is a gluten free brand.

- 20 medium button mushrooms, cleaned, stalks removed
- 3 rashers eye bacon, finely diced
- 2 tablespoons tomato paste
- 1 cup grated cheese
Method
Preheat the oven to 200°C. Lay the mushroom cups on a baking tray lined with baking paper.
Gently fry the diced bacon in a non-stick pan until crisp, set aside and cool slightly.
Mix together the bacon, tomato paste and cheese then stuff the mushroom cups evenly with the mixture.
Bake for around 15 minutes, or until the mushrooms are softened and the cheese is all melted.
