Sausage in rolls with homemade relish
Everyone loves a sausage in bread. Instead of just ordinary tomato sauce, try this delectable relish. It cooks slowly and releases its natural sugars to create a silky, sweet relish that marries perfectly with any good sausage.

- 2 tablespoons olive oil
- 2 medium onions, peeled and thinly sliced
- 1 red capsicum, thinly sliced
- 1 yellow capsicum, thinly sliced
- 1-2 tsp sea salt flakes
- 2 ripe tomatoes, diced
- 10-12 good chipolata sausages
- 10-12 small bread rolls
Method
Place the oil in a large pan on medium heat. Add the onions, red and yellow capsicums and the salt. Cook gently, stirring occasionally for around 10 minutes, until the vegetables are softened and beginning to slightly caramelise.
At this stage add the chopped tomatoes. Continue stirring and cooking slowly for around another 10 minutes. By the end the relish will have come together. All the vegetables will be very soft and caramelised and it should taste fairly sweet.
Meanwhile, cook the sausages to your liking, either in a pan or on a BBQ.
To serve, split a bread roll down the centre, pile in some relish and top with a sausage.
