Pears with rose jelly and citrus syrup

Ingredients

Rosé jelly (gelatin dessert)

  • 600 ml (21 fl oz) rosé wine
  • 225 g (8 oz/1 cup) caster (superfine) sugar
  • 2½ tablespoons powdered gelatine
  • 6 small pears
  • 1 star anise
  • 1 cinnamon stick
  • 8 cardamom pods
  • 8 whole cloves

Citrus syrup

  • 225 g (8 oz/1 cup) caster (superfine) sugar
  • 1 teaspoon grated lime zest
  • 1 tablespoon lime juice
  • 1 teaspoon grated orange zest
  • 1 tablespoon orange juice

Method

1. To make the rosé jelly, put the wine in a saucepan and bring to the boil. Remove the pan from the heat and stir in the sugar until it has dissolved. Put the gelatine in a glass bowl, pour in 250 ml (9 fl oz/1 cup) of the heated wine, and stir briskly with a fork until dissolved. Stir in the remaining wine, then pour into six 125 ml (4 fl oz/½ cup) moulds. Allow to cool, then refrigerate for 3–4 hours, or until set.

2. Peel and core the pears, leaving the stem on. Cut across the bottom of each pear so they stand up in the steamer. Half-fill a saucepan or wok with water and add the star anise, cinnamon, cardamom and cloves. Bring the water to the boil, then reduce the heat and keep at a rapid simmer. Stand the pears in a steamer in a single layer and cover with a lid. Sit the steamer over the saucepan and steam for 15 minutes, or until a skewer can be inserted with ease all the way through.

3. Meanwhile, to make the syrup, combine the sugar and 250 ml (9 fl oz/1 cup) of water in a small saucepan and stir over low heat until the sugar has dissolved. Add the citrus zests and juices, bring to the boil, then reduce the heat and simmer without stirring for 10–15 minutes. Take the pan off the heat. Remove the pears from the steamer and put them in the warm citrus syrup while plating up the jelly.

4. To serve, dip the moulds in hot water for a few seconds. Place a plate on top and turn out the jelly. Serve immediately with the steamed pears and a generous drizzle of the citrus syrup.
