Individual pot pies will be a hit in your house.

Cooking time: 30 minutes
Serves 4
Ingredients
750g potatoes, peeled and chopped
½ cup milk
1 tablespoon olive oil
1 onion, chopped
2 sticks celery, diced
1 carrot, diced
2 cloves garlic, crushed
500g beef mince
400g can crushed tomatoes
½ cup beef stock
olive oil spray
Method:
- Place the potatoes in a large saucepan of water and bring to the boil. Cook for 12-15 minutes or until soft. Drain, mash and stir though milk.
- Heat oil in a large non-stick frying pan. Add onion, celery, carrot and garlic and cook for 2-3 minutes. Add mince and cook for 5 minutes over medium heat.
- Stir stock and cook for 2 minutes until almost evaporated. Add tomatoes and cook for 5 minutes.
- Divide between 4 x 1 cup ovenproof dishes. Top with mash, spray with oil and bake for 10 minutes.
