Prawn, Mango and Macadamia Salad
1 radicchio heart
25 g (1 oz) basil leaves, torn
30 g (1 oz) watercress sprigs
24 cooked king prawns (shrimp), peeled and deveined with tails intact
3 tablespoons macadamia oil
3 tablespoons extra virgin olive oil
150 g (5½ oz/1 cup) macadamia nuts, coarsely chopped
2 garlic cloves, crushed
3 tablespoons lemon juice
1 ripe mango, cut into small dice 

Method

  1. Remove the outer green leaves from the radicchio, leaving only the tender pink leaves. Tear any large leaves in half and arrange in a shallow serving bowl. Scatter with half of the basil leaves and the watercress, and toss lightly. Arrange the prawns over the salad leaves.
  2. Heat the oils in a small frying pan over medium heat. Add the nuts and cook for 5 minutes, or until golden. Add the garlic and cook for a further 30 seconds, then remove from the heat and add the lemon juice and mango. Season to taste, pour over the salad and scatter with the remaining basil leaves.
