Raspberry and banana 'ice cream'
I've always seen recipes around the place for ice cream made out of banana and I've been very sceptical about the results. Well colour me impressed, it actually works and not only that, it's really delicious. I think the addition of raspberries with their sharp edge help to tone down the sweetness of the banana. Even my banana hating youngest child loved this. What a winner.

- 4 ripe bananas, peeled, chopped and frozen solid
- 1 cup frozen raspberries
Place the frozen bananas and raspberries into a food processor and whiz for around 30 seconds, until smooth and completely combined. If you have a whipping attachment for your food processor, put that in and whip for 2 minutes. If not, transfer to a bowl and whip using a stand mixer or egg beaters. You basically want to whip lots of air into the mixture which gives it an incredibly light texture.
Serve in bowls or cones.
