Rice salad with feta and herbs

Rice Salad with Feta, Olives & Herbs is a tasty salad that is simple to prepare.

 

Ingredients

  • 1 cup Aborio rice*
  • 1 tomato cored and finely diced
  • 1 yellow and 1 red capsicum, finely diced
  • 1 cucumber, deseeded and finely diced
  • ½  cup feta roughly chopped
  • 2 tablespoons of capers
  • ½ a cup of pitted Kalamata olives, roughly chopped
  • 1 handful each of basil, mint and parsley leaves, finely chopped
  • 1 bunch spring onions finely diced (optional)
  • 5 tablespoons of extra virgin oil
  • Zest and juice of 1 large lemon
  • Salt and pepper to taste

*You can substitute brown or other short grain rice if you prefer.

 

Method

Bring a large pot of water to the boil and add a pinch of salt.

 

Drop in the rice and cook until al dente – approximately 15 minutes.

 

Rinse the rice briefly under cold water to stop it cooking then drain thoroughly.

 

When dry, combine the rice with all of the other ingredients. Toss and let stand for at least 15 minutes before serving.

 

Note: This can be served either still slightly warm or at room temperature. If you make it in advance, bring it back to room temperature before serving.
