Satay Kebabs

Essential Baby member, Mum of two, food editor and stylist Melinda Henry whips up a family friendly meal.

Preparation time: 10 minutes
Cooking time: 5 minutes


Ingredients

1/4 cup light peanut butter
1 tablespoon sweet chilli sauce
1/4 cup milk
750g rump steak, cubed
8 pieces small wholemeal pita bread
150g snow peas, julienned
2 carrots, julienned
1 red capsicum, julienned


Method

  1. Mix together peanut butter, sweet chilli sauce and milk to form a marinade. Place steak and half of the marinade in a bowl and leave to marinate for 5-10 minutes.
  2. Pre-heat a BBQ hotplate and cook steak over medium-high heat for  1-2 minutes, turn and cook for a further 1-2 minutes or until just cooked.
  3. Place the vegetables on the base of each pita bread, top with steak and then reserved marinade.

Makes 8

 

Note: This also tastes fabulous toasted! Just cut the bread in half and fill the inside then toast on a sandwich press. This way is easier for the little ones to eat also as you can cut it into smaller pieces.
