Scallop Salad with Saffron Dressing
Scallop Salad with Saffron Dressing
pinch saffron threads
60 g (2¼ oz/¼ cup) mayonnaise
1½ tablespoons pouring (whipping) cream
1 teaspoon lemon juice
20 scallops with roe attached
30 g (1 oz) butter
1 tablespoon olive oil
3 handfuls mixed salad leaves (mesclun)
1 small handful chervil leaves


  1. To make the dressing, place the saffron threads in a bowl and soak in 2 teaspoons of hot water for 10 minutes. Add the mayonnaise and mix well. Stir in the whipping cream, then the lemon juice. Refrigerate until needed.
  2. Heat the butter and olive oil in a large frying pan over high heat and sear the scallops in small batches for 1 minute on each side.
  3. Divide the mixed salad leaves and chervil among four serving plates, then top each with five scallops. Drizzle the dressing over the scallops and the salad leaves before serving.
