Small finger sandwiches

- 6 slices bread
- 50 g (1¾ oz) sliced smoked chicken
- ½ avocado, mashed
1. Top 2 slices of bread with a slice of chicken breast and then top each with another slice of bread.
2. Spread a thin layer of the avocado mixture over each slice of bread. Top with the remaining 2 slices of bread. Press sandwiches firmly together. Set aside. Refrigerate for at least an hour.
3. Cut the crust from the sandwiches. Cut into a variety of shapes and sizes using decorative biscuit cutters.
