Ingredients
500g beef mince
1 small onion
1 egg
1 teaspoon ground coriander
1 teaspoon allspice
1 teaspoon smoked paprika
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon
salt and pepper
2 Roma tomatoes, sliced
15 mini burger buns
Chimichurri Sauce:
1 handful of each basil, coriander and parsley
1 clove garlic
1 1/2tablespoons red wine vinegar
a squeeze of lemon
1/4 cup olive oil
1/2 teaspoon ground cumin
salt and pepper
Method
Place your onion and spices into a food processor and whiz to a paste.
Pop your mince into a bowl and add your paste, crack your egg in and mix well with your hands until thoroughly combined.
Using tablespoon-sized chunks, roll into balls and press lightly to flatten.
Cook burgers on your BBQ or in a pan until they are cooked through.
Meanwhile to make your sauce, throw into the food processor all of your ingredients and blitz it until it’s the consistency of pesto.
Heat your buns in the oven, and top them with a burger, a slice of tomato and a big dollop of chimichurri sauce.
