- Preheat the oven to slow 150°C (300°F/Gas 2). Heat the oil over low heat in a pan and stir in the spices for 2 minutes, or until fragrant. Remove from the heat, add the nuts and stir with a wooden spoon until the nuts are well coated. Spread over a baking tray and bake for 15 minutes, or until golden. Sprinkle with salt and cool.
It has long been customary for people on Christmas Eve to gather around a Christmas tree and sing joyous songs with religious or festive themes, or serenade in the local neighbourhood. Lighter than hymns, most carols belong in the category of folk songs. Carols may have been sung as early as the thirteenth century when St Francis of Assisi arranged a manger scene in Italy and visitors to the scene sang carols that told the Nativity story. In England, in the fifteenth century, people sang carols to raise money for the needy. Eventually, carollers sang in the streets simply for entertainment.
