Stir-Fried Pork and Green Beans with Ginger Sauce

Stir-Fried Pork and Green Beans with Ginger Sauce
¼ cup (60 ml) soy sauce
1½ tablespoons white or rice wine vinegar
½ teaspoon sugar
pinch dried chilli flakes
1 teaspoon cornflour
1 (200) g pork fillet, trimmed and cut into thin slices
1 tablespoon peanut oil
100 g green beans, cut into 4 cm lengths
1 clove garlic, chopped
3 teaspoons coarsely grated fresh ginger

Method

Place the soy sauce, vinegar, sugar, chilli flakes, cornflour and ⅓ cup (80 ml) water in a bowl and mix well. Add the pork and toss to coat.

Heat a wok or large frying pan over high heat, add half the oil and swirl to coat the sides. Drain the pork, reserving the liquid, and add to the wok. Stir-fry over high heat for 1–2 minutes, or until browned. Remove the pork from the wok.

Heat the remaining oil, add the beans and stir-fry for 3–4 minutes. Add the garlic and ginger and stir-fry for 1 minute, or until fragrant. Return the pork and any juices to the pan and add the reserved marinade. Bring to the boil and cook, stirring, for 1–2 minutes, or until slightly thickened. Serve with steamed rice.

Note: Rice wine vinegar is made by oxidising beer or wine made from fermented rice starch.
