Strawberry pancake bites
So simple to make, these strawberry pancake bites will disappear quickly from your party spread.

- 1 cup (150g) self raising flour
- 1 tablespoon caster sugar
- 1 egg
- 3/4 cup (185ml) milk
- 1 tsp white vinegar or lemon juice
- 30g butter, melted, plus extra melted butter to brush on the pan
- 1 punnet strawberries, washed and sliced into thin rounds
Combine the flour and sugar together with a whisk in a large mixing bowl. In a jug, whisk together the milk, vinegar, egg and melted butter. Pour the wet into the dry and whisk well until combined and there are no lumps.
Heat a heavy based non-stick pan over medium heat. Brush a little melted butter on the pan then using a teaspoon, drop the mixture over the pan. Working quickly, flip them over when bubbles appear, then cook for a further 20-30 seconds on the other side. Remove from the pan to cool.
To assemble, take a mini-pancake, top with a strawberry slice, then another pancake and another strawberry slice. Hold it together with a toothpick.
