Toasted jamon and tomato roll

This small, filled roll from Seville is the ultimate breakfast sandwich. As with any simple dish, you need the best ingredients: good crusty rolls, fragrant garlic, a sweet, juicy tomato and the best jamon you can lay your hands on. One espresso and two of these is the perfect start to the day.

Ingredients

8 small bread rolls 

2 garlic cloves, unpeeled

100ml extra virgin olive oil

4 ripe tomatoes, cut in half

16 slices of jamon

Tip

There are different types of jamon. The one I have used in this recipes is serrano, which is great for cooking and very affordable. 

 

Method

Cut the bread rolls in half and lightly toast the cut sides.

Cut the garlic cloves in half. Rub the toasted sides of the rolls with the garlic to impart a generous but not-too-overwhelming flavour.

Drizzle a little olive oil over each toasted side, then rub each one with the cut side of tomato, using half a tomato for each roll, and leaving a good amount of juice and pulp.

Place two slices of jamon on the bottom of each roll, cover with the top half and serve immediately.

    • While I agree with what you have to say, Lost, the front page headline would have been written by a sub-editor. If Fairfax have sub-editors these days. Judging by the number of typos on the front page, I'd go with "no".

  • Nice but it won't beat my alternative.
    I agree with the serrano ham but instead of tomato I use with thinly sliced mushrooms fried in butter and garlic with a pinch of vegetable stock powder and an egg poached to a perfect gel consistency. Warm the ham by sitting it on top of the mushrooms for a minute or so before placing on the roll.
    Add a few parsley leaves and black pepper to finish.

    • Yeah and watch your waistline grow, nothing like good old heart attack food for breakfast, smoked dead animal meat in plenty of salt and butter with bread.Almost as healthy and good for you as lambs fry and bacon an all time Aussie favorite.

    • I didn't improve it I offered a tastier alternative.
      If you want to claim the 'ultimate' you have to back it up.
      There are better recipes that mine but I don't have to provide the best, just one that is better.

  • Good quality jamon costs $85/kilo at my local deli. Serrano may be cheaper.

    Careful what you buy.
