Top it off - Tarragon Sauce
Tarragon is the perfect partner for chicken. This is a simple tarragon sauce to serve with fillets, or roasted chicken or game.

2 thick slices ciabatta bread, crusts removed (about 90g).
1 tbsp red wine vinegar.
2 bunches tarragon, chopped.
1/2 clove garlic, crushed.
1 tbsp capers.
3-4 anchovies, chopped.
Extra virgin olive oil (about 1/4 cup).
Break the bread into very small pieces and place in a bowl. Use your hand to sprinkle a little water over it until just moist. Sprinkle over the vinegar and leave for 20 minutes.
Add the tarragon, garlic, capers, anchovies, pepper and enough olive oil to make a paste. Spoon the mixture onto hot chicken and serve.
