Ingredients
- 1 carrot, peeled and julienned in long strips
- ½ red capsicum, julienned into long strips
- a handful of snow peas, julienned
- 1 Lebanese cucumber, halved then cut into threes lengthways
- 1 avocado, cut into strips
- 1 x 200g packet of flavoured tofu
- 4 sheets sushi nori
- pickled ginger
Method
Ideas can get a bit stale in the old lunch box department so here is a simple and delicious idea to keep your kids interested at lunchtime.
These cheat’s handrolls are so quick and easy, and because you’re not cooking sushi rice they’re considerably less fiddly than actual sushi.
Nori seaweed is really good for you as it’s high in Vitamin C, iodine, calcium and magnesium and is packed full of protein.
You’re really only limited by your imagination, and your child’s taste, as to what you put in them so don’t be afraid to get experimental… Lord knows, Sushi Train has because I don’t think sundried tomato and cream cheese is especially traditional!
I love eating these myself, but I put a smear of wasabi on the nori.
1. Slice your nori diagonally in half. With the shiny side facing down, and the point facing away from you, place a piece of avocado, and tofu into the pointy end.
2. Layer up the vegetables you want, and add your ginger before rolling the side closest to your thumb over in an upwards direction.
3. Roll the remaining nori around your roll and wet the end a little to seal it down.
4. It may take a few goes to get the amount right, or the rolling correct, but eating the mistakes is spectacular for your health!
