Essential Baby member, mum of two, food editor and stylist, Melinda Henry whips up a family friendly meal.

Cooking time: 10 minutes

Ingredients

500g lean rump steak, thinly sliced
juice of 2 limes
1/1/2 tablespoons fish sauce
1/1/2 tablespoons brown sugar
2 teaspoons vegetable oil
200g rice vermicelli, soaked in boiling water until soft and drained
1 tablespoon sweet chilli sauce
2 carrots, julienned (cut into thin matchsticks)
2 cucumbers, chopped
4 tablespoons mint, roughly chopped


Method

1. Place the steak in a bowl and add lime juice, fish sauce and sugar. Mix well.

2. Heat oil in a large non-stick frying pan. Add steak, reserving any juice and cook for 1-2 minutes or until just cooked. Add juices and noodles and heat through.

3. Mix in sweet chilli sauce, carrot, cucumber and mint and serve in lettuce leaf cups.
