Yoghurt Banana Cakes with Honey Icing

Yoghurt Banana Cakes with Honey Icing
180 g (6 oz) margarine, softened
90 g (3¼ oz/¼ cup) honey
230 g (8 oz/1 cup) caster (superfine) sugar
1½ tsp natural vanilla extract
3 eggs
360 g (12¾ oz/1½ cups) mashed ripe banana (about 4 bananas)
185 g (6½ oz/¾ cup) low-fat plain yoghurt
½ tsp bicarbonate of soda (baking soda)
375 g (13 oz/3 cups) self-raising flour, sifted

Honey Icing
125 g (4½ oz/1 cup) icing (confectioners') sugar
1 tbsp honey
1–2 tbsp warm milk or water

Method

 

 

  1. Preheat the oven to 180°C (350°F/Gas 4). Lightly grease a flat-bottomed patty cake tin and line with paper cases. If making two large cakes, lightly grease two 15 cm (6 inch) round cake tins and line the bases with baking paper.
  2. Cream the margarine, honey, sugar and vanilla in a bowl using electric beaters until pale and fluffy. Add the eggs one at a time, beating well after each addition, then beat in the banana.
  3. Combine the yoghurt and bicarbonate of soda in a small bowl. Fold the flour alternately with the yoghurt into the banana mixture. Divide the mixture evenly between the paper cases or the cake tins. Bake for 18–20 minutes for the cupcakes, or 50–60 minutes for the large cakes, or until a skewer inserted into the centre comes out clean. Cool in the tins for 5 minutes, then turn out onto a wire rack.
  4. To make the honey icing, put the icing sugar in a small bowl. Melt the honey in the microwave or a saucepan over low heat until runny, then add to the icing sugar. Gradually add the milk or water, a little at a time, stirring until the mixture is smooth and coats the back of the spoon. When the cakes are cold, drizzle them with the honey icing.

 

Hint:

• These cakes will keep, stored in an airtight container, for up to 4 days. Un-iced cakes can be frozen for up to 3 months.
